An Invercargill couple are starting a vegan bakery and one of the first things to roll out of the oven will be plant-based cheese rolls.
When Jessinta and Chayse Leith first thought of starting a fully vegan bakery, their biggest fear was that there would not be enough demand in Southland for the product.
Having been vegan for about two years, they found it difficult to purchase plant-based food in Invercargill that wasn’t from a chain store, or wasn’t also gluten-free, fat-free, raw or “basically a health product”.
But the first day they set up the Herbie Fully Vegan stall at a local market they sold out of cinnamon scrolls in half an hour.

The next week they returned with double as much product, but still only had enough stock for the first hour and a half of the day.
“I was really worried people would be scared to try it, but I only had one lady ask what was in it or how it could be vegan, and she ended up buying something … there’s more people out there [that are vegan] than you realise, they’re just not making a lot of noise, there’s a huge demand for it down here,” Jessinta said.
Now, the couple have purchased a food trailer with the vision of refurbishing it to park in locations around Invercargill or at festivals this coming summer.
All food is currently produced in the couple’s home kitchen, which has a council approved commercial kitchen licence.

So far cinnamon rolls have been the couples most popular dish, selling out almost immediately at the Leith’s first stall. They are looking to add corner bakery staples to their food truck, including vegan cheese rolls and steak and pepper pies made with jackfruit.
It will be the first fully vegan food outlet in Invercargill.
The couple plan to add a pie-warmer to the food truck, with Jessinta trying her hand at “southern sushi”.
“I’ve been trying out cheese rolls, I’ve found vegan onion soup packets, it’s just about the price range right now … Kiwi’s are really good at mince and cheese pies as well, so we’ll be trying that out with TVP [textured vegetable protein made from soy] … once we get the van going we’ll be able to have that real corner bakery range.”
Chayse, who was raised in Southland and is the son of a dairy farmer, is a self-confessed pie-making whiz.
His vegan steak and pepper pie, which he makes using jackfruit, has even tricked his dad at times.
“And that’s saying something, if a dairy farmer thought it was good,” he said.
The couple want to encourage people to ditch the narrative that vegan food is “all grass”, and raise the profile of the wider variety of plant-based food in Southland.
“I often remind people that sugar is vegan … some people are “anti-vegan” or come in with all these pre-conceptions … but we’ve had such a positive response, there is demand, and people are open to trying it.”
