For the salad
- 2 clementines
- 2 heads of kohlrabi (small, with stem and leaves)
- 2 tbsp Brazil nuts
- 100 g arugula
- olive oil
- Salt
For the chicken breast
- 2 chicken breasts
- 4 bags of herbal tea
- 5 sprig(s) of thyme
- Salt
- pepper
For the dressing
- 2 tbsp maple syrup
- 4 tbsp lemon juice
- 6 tbsp olive oil
- Salt
- pepper
preparation
Cut the leaves and stems off the kohlrabi for the salad. Cut the stalks into small cubes. Place the leaves on a baking tray, season with a little olive oil and salt and bake at 160°C for about 10 minutes.
Peel the kohlrabi and slice into thin leaves with a V-slicer, season with a little salt and leave to stand for about 30 minutes.
Roughly chop the Brazil nuts and pluck the leaves from the thyme stalks. Peel the clementines and pluck the flesh apart, wash the arugula well and pat dry.
Mix all the ingredients for the dressing together well.
For the chicken, put three fingers of water in a saucepan with a steamer insert and bring to the boil together with the plucked thyme stalks and the herbal tea. Place the chicken fillets on the steamer basket, season with salt and pepper, cover and steam for about 15 minutes.
Empty the dressing into a bowl, add the remaining ingredients and mix well. Season with salt and pepper, arrange flat on a plate and place the thinly sliced chicken breast on top.
